I am such a dessert lover, I can almost never say no to anything sweet. That's probably the same with all the Bongs. I guess lately I have been bitten by the baking bug, these days I can only think of Crème brûlées, cakes, muffins...
It's a little difficult to arrange things for a hassle free baking exprerience in Bangalore, I think. I have been searching store after store for decent butter sheets and muffin trays and have returned dissapointed from many. Even the supposed largest lifestyle store's sales people didn't know whats a ramekin! Can you imagine that.
Anyways now that I have collected many - thanks to Indro & his work trips- I thought lets get into the baking mood and make some muffins! yay. So here goes the easy little Blackberry Muffins... Don't worry if you don't get any fresh blackberry... I also didn't... use a ready made blackberry preserve!
All that you need
1. 1 1/2 cup all purpose flour
2. 1/2 cup sugar
3. 2 tspn baking powder
4. 1/4 tspn salt
5. 1 egg - whole egg
6. 1/2 cup milk
7. 1/4 cup melted butter
8. 6 tspn Blackberry preserves
Lets get Started
Preheat your oven at 200 degrees. Its important to preheat your oven when you are baking.
Seif in flour & baking powder & mix in sugar
Slowly mix the wet ingredients . Mix milk and egg to the melted butter and combine it with the dry ingredients in a mixing bowl. Mix it till its a smooth paste.
Put paper cups in a muffin tray.
Fill the cups half with the muffin batter - you need to give space for the muffin to rise
Now the easiest and the yummiest part. Put a dollop of Blackberry preserve in each cup and pop it into the oven. Bake it for 20-25 mins at 200 degrees C or 400 degrees F.
Thats it... after that pure bliss... enjoy the hot yummy muffin
Little suggestions -
- If you want the top of your muffin crunchy and brown sprinkle a little brown sugar before putting it in the oven
- You can add fresh fruits, or any other preserves. Experiment n enjoy.
